With the holidays over and the winter approaching, those additional pounds have begun to show. Who could not partake in those delicious homemade cookies, cakes, and calories? But let’s face it, with the holidays over it’s time to think of some low-calorie recipes to get the additional holiday weight off, and what better time to do this is now as we approach the season of Lent.
This winter our Aunt Margaret Pecoraro turns 104!!!! Her recipes have been handed down in the family for generations, and it is this very time of year that I search through them for some Lenten favorites. Our most favorite is a Pepper and Egg Sandwich. It is quick and easy to make and tastes delicious. Hope you too can enjoy this recipe as much as we do.
Pepper & Eggs Sandwiches
Scramble two to four eggs, depending on how many sandwiches you are making, and set these aside. Next, add chopped sweet bell pepper for additional taste (some recipes also add onions). It is helpful to sauté the chopped Peppers before adding the eggs. After adding the ingredients together and cooking them, the delightful meal is then typically served on either French bread or your favorite roll. It is a popular staple on the Fridays during Lent, especially in Italian households. The ingredients are a good source of protein, calcium, and Vitamin A.
It is thought that the origin of this sandwich is from Italian-American immigrants who originally brought their peppers and eggs sandwich recipe with them as they migrated to the Midwest, namely Chicago.
